Portland is a huge taco town – and the cast of Portlandia was all about tacos, tacos, tacos – and really anything that worked on a tortilla. Carnitas, carne asada, chicken tinga, chile verde, guajillo chicken, fajita-style shrimp… you get the picture. We loved cooking up mouth-watering creations for all to enjoy.
It wasn’t all tacos, all the time. Portland is a foodie town, so we mixed it up with Bahn mi sandwiches, Philly cheese steaks, breakfast for lunch, paninis, bbq, and burgers. Of course, one time we picked the hottest day of the year to tow our giant barbecue to the lunch location. The heat didn’t stop us from cooking burgers to-order for the crew, though! You know what they say: If you can’t handle the heat – get out of the kitchen! We may have been hot on that occasion, but we enjoyed every moment.
One challenge we faced was the sheer number of guest stars. With so many different faces every day, we made sure to provide a variety of food that worked with all sorts of dietary needs. We also got to meet so many amazing people and see a ton of fun costumes come through our buffet line.
